Frozen Watermelon Basil Cooler for the Hottest Days

When the heat gets serious, the only sensible response is to blend fruit with ice and drink it with a straw on the porch. This cooler does exactly that, with a little herbal backbone from fresh basil and a squeeze of lime to keep everything bright. It is barely sweet, deeply hydrating, and comes together in about five minutes.
You will need roughly four cups of cubed, chilled watermelon — seedless is easiest. Add a big handful of fresh basil leaves, the juice of one lime, a tablespoon of honey or agave, and about a cup of ice. Blend until smooth. Taste it. If your watermelon was especially sweet, you may not need the sweetener at all. If it was bland, add a little more lime before you add more sugar.
Making It Actually Slushy (and Why That Matters)
The difference between a good frozen drink and a great one is texture. You want it thick enough to hold a straw upright but loose enough to sip without a spoon. If your blender struggles, add a splash of cold water — a tablespoon at a time — rather than more ice. Too much ice and you will end up with a flavorless slushie.
Freeze your watermelon cubes ahead of time and you can skip the ice entirely. The result is a richer, more concentrated drink with no dilution at all. This is the move for a party, because you can prep the fruit the night before and blend to order.
Garnishes, Variations, and Serving It for a Crowd
Garnish with a small basil sprig and a thin wedge of watermelon on the rim. If you want to make it a cocktail, add an ounce and a half of white rum or a splash of prosecco per serving — both work beautifully without overwhelming the fruit.
For a crowd, blend in batches and pour into a pitcher set over ice in a cooler. Keep the pitcher in the shade and give it a stir every so often. Provide small cups rather than large ones; people will come back for refills, and the drink stays colder in smaller pours.
